Amber; breadmaking, is one of my favorite, hobbies!! One of my secrets is to add 1/4 tsp. ascorbic acid (rose hips,or most any,crushed, tabletized form of vitamin C,per Tbsp. of yeast,to your yeast, proofing mix,. ..which will ‘turbocharge’ the leavening action of the yeast!…allowing, in some recipes, the appreciable, volumetric reduction of the recommended yeast inclusion,while obtaining the requisite leavening action! how enjoyable, I think, it would be to spend an afternoon making bread with you!!
